Getting really excited now with under 4 weeks to go!! Still got a few things to sort out and 2 of these are car hire and car parking at the airport. As far as car hire is concerned we are getting magical express on arrival and picking up the car the next day from the car care centre so I'm just really looking for pointers on where to get the best deal....do I go straight to Alamo or through a 3rd party? Want to pick up from car care centre and then drop off at MCO on departure day if possible.

Thanks for any and all help :)

What dates and size car?

You just missed a Holiday Autos sale on Friday. Our July dates were not covered but yours would have been in 4 weeks.

Ok sorry I should have mentioned dates :) would pick up car on 1st June and return to MCO on 14th June. In terms of size of car probably intermediate if that is equivalent of Corolla estate etc

Cheapest would be Holiday Autos at £222 less 10% Quidco = £200 (13 days)
You need to collect same time as drop off time for this price, if you are collecting before drop off time then it will add another day.

Collecting day you arrive from MCO works out same price from Expedia £215 less 7% Quidco = £200 (14 days)

What is insurance excess / deposit cover? It's asking if I want to add this

It's an additional policy they sell. Not something I would buy myself but others do. You either buy here in the UK at £3.75/day or add at the desk at $5/day.
As I say its not something I buy but if I did I would add at the desk, if you had to claim then far easier to use the rental firms own cover than mess with a claim on returning back to the UK.

First 2 are covered on US rentals, they also sell this policy for Euro rental where these are not covered. Last one is covered on your Travel insurance.

You are really buying the cover for things like leaving your lights on all night, locking your keys in the car, etc,

Excess
Deductions from your security deposit

Windows
Tyres
Undercarriage
Roof
Rental car key cover

Personal Possessions

I have rented cars in the US totalling approx. 100 weeks if I had bought the cover I would have paid out about $3,500 or over £2,000, not needed once. As with all insurance its your choice but 99.9% of the time not required.

When I picked up my e-ticket and travel information, I found out that I had a hire car despite stating at the time I booked the holiday last year that I was using ME.

What do I need to do here? It does look like it's included in the package regardless so do I simply not turn up for it and just go get my bus or do I notify the rental counter as a courtesy

No need to collect or go to the desk at all!

As Tracy says, no need to do anything.
Personally I would not even tell them upfront I didn't want the car, depends who you booked with but its with the T&C's of some companies to charge a fee if you say you don't want the car. VA definitely charge a fee on their flydrives if you tell them you don't want the car. Far better to just ignore it and don't collect.
