Canoeing at WDW & Something Different

My 8 yr old DS has just gotten the canoeing bug with Cub Scouts and I was wondering what and where was best to do this at WDW. We've been many times and I'm just trying to plan some different things for him and his sister, my 5 yr old DD to do this time.

Any recommentations
