Canned Potatoes

We use them in Hamburger Soup. Which is a canned vegetable fest!

Fry Hamburger very well done Add to soup pot of

canned corn with liquid
canned green beans with liquid
Canned potatoes drained and sliced
Frozen Pea or Cauliflower or broccoli

Added Ketchup to liquid.
Add Salt
Add Onion Powder
Add 1/2 as much Gralic Powder

Add enough Black Pepper to add enough back notes to make it Soup!![it takes a lot, just keep tasting till it is right]
 
I am going to add canned potatoes to my shopping list!!! Never knew you could do so much with them~I just use them for shis kabobs (sp??)
 
I use this one recipe from Paula Deen. Instead of the new potatoes, I subsitutite can potatoes. I omit this step since the potatoes in the can are already cooked: "Cook the potatoes in boiling water until tender, about 20 to 25 minutes. Drain the potatoes, let cool slightly, and then peel."

Crunchy New Potatoes

12 small new red potatoes
1 (0.4-ounce) package ranch dressing mix (recommended: Hidden Valley Original Ranch Buttermilk Recipe)
2 cups crushed cornflakes
8 tablespoons (1 stick) butter, melted

Preheat the oven to 400 degrees F.
Cook the potatoes in boiling water until tender, about 20 to 25 minutes. Drain the potatoes, let cool slightly, and then peel. Mix the dressing mix and the cornflakes in a bowl. Dip the potatoes in melted butter, and then roll them in the cornflake mixture. Place the potatoes in a greased baking dish and bake for 20 to 25 minutes, or until golden brown.
 
I cut them up and use them in stew I make in the crock pot. They also make good hash browns if you slice them up.

I use canned potatoes for home fries (at least that's what my family calls them). I slice them and cook them in a pan with butter and an onion until they're crispy and golden.

I also use canned potatoes for potato stroganoff. I mix a can of cream of mushroom soup and some sour cream in a casserole dish. Then I dice up some round steak, cook it with a tiny bit of oil and a beef boullion cube, add it to the casserole dish, then slice the canned potatoes and add them to the casserole dish. Then I bake it at 350 for about a half an hour. It's my husband's favorite meal.

I found out last night, I accidentally bought a can of the sliced white potatoes instead of the whole. They tasted exactly the same but the pre-sliced will save some time on slicing for hash browns, home fries, scalloped potatoes & stroganoff. :cool1:
