Cancelling vs Changing a reservation

I understand that if you cancel a reservation they day of said reservation you get charged a fee (which is fair to me) but am I able to change a reservation the day of to a different restaurant and avoid the fee?

I've changed mine the day-of on the app, but I don't know what time the cut off would be.

Not exactly the same, but we were running late to an adr but we were leaving back home the next day. I changed the reservation to the next day, then canceled it a few hours later. No charge, easy.

A concierge did that for us when we canceled an ADR fo tea. My DH bought my friend and I a session at Senses Spa, and the only time available conflicted with the ADR. I was willing to pay the fee because tea or a massage????? But the concierge just moved the ADR and then canceled.
