I believe it's 3 days before embarkation.

Officially three days before sailing! But on longer sailings I have been told by DCL I could cancel the day before as long as they haven’t given the vendor the headcount they could make changes to things.

Or if they're able to re-sell to someone else on board. We've had friends be able to snag a port adventure on board that they had wanted but which was unavailable when they tried to book it before sailing and it was because someone cancelled at the last minute.
