Canadel, Saloom or Something else?

We want to replace our kitchen table after 15 years and I am looking for a specific size, with specific details so it seems that having a choice between several components sounds reasonable. Canadel uses birch. Saloom, cherry and maple. Since its for the kitchen, maple seems to be a harder wood. Any thoughts?
 
if you know what specific type of birch, cherry or maple you could compare it on the Janka Hardness Test....

I am more trying to decide between Saloom or Canadel, and pretty much have decided on maple or birch. Cherry isn't as hard.
 
Saloom is a great company! They have an amazing finishing process. You won't be disappointed.
 

What kind of table top is it going to be?
I have a canadel with a corian top. It is a great table
But the leaves on the top leave a wider seam than I would like.
Does that make sense?

Wood. I want a transitional look or mission/shaker. I like this saloom set in java with a boat shaped table. In fact, I want a boat shaped table with either company but I won't be able to get these crescent legs with Canadel. I even like the chairs in this link.

What length lead times are they quoting? I know that Saloom is really quick, and the factory is in MA, so that should cut down on how long it takes to get there.

We purchased a Canadel table when we were living in MA 12 years ago. It's a light colored birch. It has survived 3 babies/toddlers/young kids. I've scrubbed permanent marker, paint etc etc off it. The finish looks almost new. I don't recall it taking very long to come, maybe 4-6 weeks.
