The Wild Mushroom Rissoto came with my steak at Le Cellier and I didnt like it. I asked the waiter if I could have the mashed potatoes and he brought it out at no extra charge, no problem.
Usually you can sub something but not always exactly what you want. For example, Coral reef had baked potatoes as a side on one dish and they didn't make very many extras so unless you had a food allergy situation they wouldn't let you sub for a baked potato. Things they have plenty of though I've never had a problem.
I come from a family of picky eaters and one vegan. At least one person always requests something to be changed at every meal and we've never had any problems at all.
My husband does this all the time at any restaurant. He hates vegetables and will switch. Basically, any other side item on the menu can be substituted for what is listed with your entree. And don't forget about the kids menu. Fries, fries, fries.
