they suggest one and a half days at each park (3 days total) is ideal. if you are there early and pay extra for the express option, you can probably get a lot done...depends on what you like and whether you decide to ride things multiple times...

several of the rollercoasters at universal/IofAdv are really great if that is a factor.

you really need to stay in a Universal hotel - if you do - 2 days fast pass (or whatever it is called) is included -your check in day and check out day.

and it is a better deal than the thing you can buy.
 
I have done both parks in one day and it was in April a few years ago before the HP ride. If you are not looking to watch any of the shows, then it is possible. We didn't even have fast passes.
 

We did both parks during the Thanksgiving break this past week on a Sunday. The longest wait we had was at the Castle Harry Potter ride which was 30 minutes.

We plan to spend one night this next trip in March to take advantage of the express pass during spring break as I am betting with Easter and Spring Break together it may be quite busy, and we have two days left on our tickets.
