I think you can buy kits already put together with the album. But you can personalize it if you buy everything serperate. I always buy seperatly because I don't like 1/2 of the stuff in the kits!!

You can purchase scrapbooks and then there are kits which include paper, some die cuts and stickers that match. There are several different kits and keep an eye out for holiday-themed ones if you are there during those time periods. There is also a spiral bound book of paper and plenty of punches and sticker sets that you can purchase separately. Happy shopping!
While I love the park ones (I think I own all of them except the holiday ones since we've only been for halloween), I suggest purchasing some of the character kits at your Local Scrapbook Store (LSS) or Craft store. They are a bit cheaper and you don't have to commit to so many stickers. That's the only thing I don't love about the kits. For example I bought the 50th one for both DL & WDW (since we went to both that year). In just one of the kits there were over 100 little stickers. I find it harder to use the little stickers without making my pages seem too overdone.
My suggestion is to go to the Scrapbook store in DD and pick out 1 or 2 of the kits you really like and that fit some of the activities you've done. (For example, I really like the eatery one because we always go to a sit down for breakfast & dinner - We've been a group of all adults until our next trip.) Then when you get home, group your pictures how you want to scrap them. Then fill in any paper/embellishment holes with stuff from your LSS or craft store.

mousememories.com has a few kits too but I mostly by separate items. Most of the chain craft stores, Michael's, ACMoore, and Joann Fabric has Disney stuff.
some great online stores are mousememories.com and scrapyourtrip.com that have some really nice stuff. I'm quite disappointed in the supplies from WDW but they do have some cute stuff.

There is a little store in/around Tony's restaurant right near the entrance to MK that has a lot of cute stuff. I stocked up while waiting for our reservation one day.

You can order from WDW Merchandising (407) 363-6200. I bought the 40 page 12" x12" paper kit (it includes 40 different Disney pattern sheets) for about $15.00 after I got home.
I've heard the fancy scissors (like Mickey ears etc) don't cut well, so don't get those. I'd get the punches and any paper that takes your fancy if its exclusive. I'm not sure if the albums are expandable, or how easy it is to get new pages, so you might be better getting a themed album from your local store.
