Trying to maximize our chances of finding FP+ for A&E, I split our parties:
party 1: DS(5) and I
party 2: DH
we also have DD(2), who's the one interested in A&E, but of course we don't have to reserve FP for her

I got FP for party 1 @ 8:30 pm, and was lucky to get one for party 2 at 11:50 am. I think my husband would rather stay outside with DS(5) and have me go with DD(2) to A&E at 11:50 am. Could I just switch bands with DH and go in his place?

Yes. Also, since you have two fastpasses at 11:50, your son could go meet A&E too if he wants since your DD is two and won't be using either fastpass. Otherwise, one of the Fastpasses would go unused.

We only have one FP for 11:50 am (DH). The other 2 (DS5 & I) are for 8:30 pm.

Update: I decided to risk it, lose the 8:30 pm FP and split party 1. Here's what I got now:

FP1 (DH): 11:50 am-12:50 pm
FP2 (DS5): 12:00-1:00 pm
FP3 (me): 12:50- 1:50 pm

So technically we could all go together at 12:50 pm, correct?

Yes, the complete family can enter at 12:50.
