If it's just you two, imo you can do it in one day.
Oh yeah, easily. But they do have a nice funpass which you could come back all year long for only a little more.
I've also found this extremely nice hotel called Extended Stay Deluxe on WestWood (road near seaworld) and they have very nice rooms for $69.99
