Can someone help me with GF cakes?

While at Disney, my DD will be turning 6. I booked Princess Gala at the Grand Floridian to celebrate this special occasion. I'm in the process of ordering her a Birthday cake and leaning towards the castle cake. But at this point, I don't know what type to order. My Questions:

1) What flavors does this come in?
2) what type of frosting?(She hates whipped...only butter cream)
3) Along with the castle on top, I would love to have a carriage with horses piped around the outside of the cake, can this be done?

Any help would be greatly appreciated

They can do the cakes pretty much anyway you ask. We have ordered cakes a couple of times, and the GF has excellent cake.
