I need a recipe or two please ...

First off, I need to know if anyone has a recipe for an individual size fruit cake/Christmas cake.

Plus I need a recipe for something Christmasy, like Chocloate Truffles or something similar, but I need two recipes like that........one using Chocolate perhaps & one using something else...................

It's for a home economics assignment I have to do. I need to make two confectionery items, but both using different processes.

Hey Jadyn.

I have a simple recipe that I make at Christmastime. It uses melted white chocolate, peanut butter and ritz crackers (do you have ritz crackers over in Australia?).

Melt the white chocolate on low heat. As it is melting, assemble the crackers and the peanut butter into "sandwiches". When the chocolate has melted, dip the sandwiches in the melted chocolate and place them on wax paper to set. Sometimes I assemble the crackers before I melt the chocolate, so that I won't burn the chocolate.

Shannon, only trouble is with this, is that I have to do a Gift Basket Presentation & so I need to be able to make whatever it is ahead of time & it needs to be able to be wrapped in celophane for presentation.

Jadyn, the chocolate hardens and isn't mushy. It wraps in cellophane quit well. It won't stick to the cellophane. The white chocolate I use is also known as white almond bark.

I hope Steve moves in next door to you. I hope your Mum has room for me to come visit if he does move in next door.
