I was thinking of shipping a box ahead by UPS, but then I realized we are flying Southwest and we never use our 2 bags per person, so can I bring a box with our name as long as it's under 50 lbs? I can ship the box with "consumables" and then we won't need to bring an extra bag or suitcase on the way back.

As long as you don't pack any prohibited items - and that the weight and dimensions for the packed box don't exceed guidelines - the answer is yes. Here are United Airlines guidelines for checked baggage:

United's restrictions are similar to that of most other North American airlines.

A cardboard box? That could be difficult if TSA feels they need to open it for some reason.

They seal it back up with packing tape if they open it.

So long as it meets the weight and dimension requirements, they'll accept it.

On our last trip in 06' we packed one suitcase with nothing but snacks, cereal, and juice packets.
It really worked out fine and we saved a lot of money plus you have an extra suitcase for the trip back. The suitcase was a carry on

You might want to check SW's website to see their policy. I just booked a flight on JetBlue and for some reason they have a new policy that specifically states that no cardboard boxes are allowed. There may have been an explanation but since I wasn't planning on bringing a box I didn't really look into it.

I would think a light duffle bag would be a lot easier to carry to/from the airport - and could be thrown in your other luggage for the trip back.
