Can I change a guest in our room mid-stay?

During our upcoming visit, we have a friend who will be joining us for two nights at the beginning of our 8-night stay. Our room allows five guests, so I simply added her to our reservation. After she leaves, is it possible for us to remove her from the reservation and add a different guest? We have a family member who would like to stay with us a night or two at the end of our trip (after she leaves). We would never exceed permitted occupancy.

I wouldn't bother if it weren't for Extended Evening Hours. We are staying at a deluxe resort, so if she is on our reservation she would be able to enjoy the extra hours with us.

Yes, when your friend leaves, go to the front desk and have her removed from the reservation. When the family member arrives, simply go back to the front desk and add that guest to the room.
