I'm wondering about bringing water, either in a water bottle or in my own thermos. Also, if I need access to hot water (like for hot beverages) where would I go?

Yes you can bring in water, either in disposable bottles or refillable.
Hot water- I don't know about that

You'd probably have to ask at one of the counter service locations for hot water. Don't know if they'll just give it to you, or if you'd have to, basically, buy a cup of hot tea.

If I needed hot water... I would look for a place that served hot tea.

can you bring hot water into the park in a thermos? Not sure if that's allowed. We brought a small foldable cooler with cold water bottles and capri sun and that was not a problem

We bring hot tea into the park all the time in a metal thermos. We've also filled it with hot water at the Starbucks on Main Street. They can't fill it for you but will give you hot water in a cup. Don't stand in line to ask, just go talk to one of the baristas.

On my last trip I had a baby who liked warm bottles. To mix them I would ask for a cup of hot water and then mix it with cold water bottles and get the right temp for the bottle. They would not give luke warm water though only really hot so often I would ask for one a half hour or so before I needed it then still would need to cool it down.

I've had a cm refuse to give me hot water if they knew it was for a kid. Only a couple ever asked but I had to be more discreet after that.

The reason for this is that a baby was scalded a year or two ago by a parent who put HOT water from a CS restaurant into a bottle. Now all CMs are supposed to ask whether the hot water is for a child/baby. (As you've noticed, not all CMs ask -- they seem to ask more often at DCA.) If so, then the request will be refused. I ask for hot water on every visit at CS and TS restaurants and don't have any problem as long as I make it clear that the water is for me.
For warm/hot water for infant formula, the baby center has a microwave that can be used to heat water to the desired temperature.
