Can I book the hotel now?

Can I book my hotel at disney now and pay for tickets and dining when I get there? Will the price be different? I know I have to pay off the trip 45 days in advance but I can't so can I just book the hotel?
 
You have to book and pay for dining at least 72 hours in advance, and it requires changing you reservation from a room-only to a package, so the room rate could change or not be available.

If you're going to pay for meals as you go, then you won't have a problem with your plan. Room only reservations require a one night deposit and can be cancelled five days prior to arrival for a full refund.

if you don't purchase tickets until you arrive you won't be able to make FP+ until then.

I wouldnt have a problem paying 72 hours in advance, but I am concerned since you said the room rate could change or not be available. Maybe I should skip the dining plan then....not sure we'd really be saving with it right now anyways since both our girls are considered "adult". how about the tickets?

If your kids are "adults" by Disney's standards, then you will not save money using the dining plan. Skip it.

Tickets can be purchased at the gate. Some websites, like Undercover Tourist, do offer discounts, but nothing more than 5% normally. You do, as another poster mentioned, need to have tickets loaded to "My Disney Experience" in order to pre-book fastpass+. You can also book fastpass+ at the park or on your phone after you get tickets, but your selections may be limited at that time.

do they technically still have to order from the adult menu if they are over 9? Both would probably only eat stuff that is on the kids menu

Then it's really not worth buying the dining plan. It's only worth it if you feel like you'll get more food than you're paying for. If your kids will most likely eat from the children's menu, why prepay for adult meals? Just pay for what you want as you go.
