Can I book the DDP with a 2 night stay and 1 day ticket?

As long as you book a package you can add the DDP, unless you're booking with a special that has a minimum stay requirement.

Just as an example here's pricing from the WDW website showing even just a one night stay with the DDP and one day ticket can be done with the latest code:

You can book any length of ticket with your package. It does not have to equal the nights you spend at the resort. However, everyone on your reservation must book the same length of ticket.

There was a three-night minimum on the room for the free dining promotion, but there isn't one for general packages.
