Can I book a room only then...

add on park hopper passes and dining later. I have AAA and am not sure what kind of package I need, but want to get my room booked. Also, if I book a room only do I have to book through AAA?

If you want to add on tix and dining, you would need to book the package as a whole new reservation. If you want room-only, you can book yourself, mention AAA and show the card when you arrive. You get the advance purchase price on the tix when you book a package through AAA (along with the AAA rate on the room).

If you want dining, then yes you have to book both together. If you want room only then you can book through CRO or AAA. You can add tkts. on anytime before you go and still get discount on them.

I used Magical Journeys to book our room only with the AAA discount. They're going to add our hopper passes on about a week before we leave, and have them encoded on our room key for convenience. (Of course, you need to stay in a WDW resort to do this.)
