Looking to stop in at the campground to see the stables. Is there any issue at the gate with getting in and parking? If there is, we can always take a bus over from one of the parks.
You may or may not be allowed to park at the Outpost, the main entrance to Ft. Wilderness (at the bottom of the map linked below) - sometimes that parking lot is restricted to guests staying at the Fort or having dining reservations there. If you do park there, you'll have to take the internal bus to the Settlement area (top of linked map) where the stables are (I'm assuming you want the Tri-Circle-D stables that house the Disney carriage horses - the trail ride horses are at the Outpost). If you take a bus from any park other than MK to Ft. Wilderness, it will drop you off at the Outpost as well, and you'll still have to take an internal bus to the Settlement.
If you go to MK, though, you can take the boat to Ft. Wilderness, which docks at the Settlement just a short distance from the stables. If you're driving, that means parking at TTC and taking monorail or ferry to MK. If you ride a resort bus to MK, it drops you off close to the dock where you can board the boat to Ft. Wilderness.
At Christmas time we wanted to go stroll about and see the guests Christmas decorations, but security would not let us in to park. So we went over to Disney Springs and took a Fort Wilderness bus and strolled about.
