I thought that all food at WDW was calorie/carb/fat free!
I guess that you could probably get them from the restaurant them selves, but I have never even thought to do that.
Also, if you know the recipes, you can use something like Calorie King to calculate the nutritional information.
If you need to eat healthfully at Disney, the best advice I can give is to check out the menus at allearsnet.com first, and make a plan of action. The full service restaurants will usually bend over backwards to accomodate you, and you can work with the counter service menus. A lot of counter service places have salads, wraps, fruit, and carrots.

I was so worried I was going to gain weight because it seems all we do is eat but you also are walking all day so I think it all balances out. Just try to stay away from the burgers and fries, they have alot of other yummy things too.
