Calling all planning experts! What would you do?

Hey everyone! After my awesome March trip with my parents and little brother, I just received a 4 night/5 day trip with one of my friends! Currently booked at AKL, but that is probably changing since it seems to be out of the loop.

ANYWAYS, since the trip is in the hottest part of the summer (Aug 7-11) we are trying to plan at least 2 sit down meals a day as a break from the heat and sun. Here is our current list, and I've never been to any of these places except for Brown Derby. I'm also a vegetarian, but I've noticed that a lot of things can be modified if there is nothing specifically for me on the menu.

I'm just wondering what you experts would do differently or what you would add? I can't decide and my friend doesn't really have a preference, except she loves princesses! We arrive in the morning on Aug 7th and leave in the evening on Aug 11.

Aug 7: 9:10pm dinner California Grill

Aug 8: Akershus Princess Lunch 11:55am
1900 PF dinner 6:05pm

Aug 9: Yak & Yeti lunch 12pm
Brown Derby dinner 7pm

Aug 10: Plaza 12:00 lunch
San Angel inn 7:15 dinner (not sure about this one...checked out the menu and wasn't seeing very many vegetarian options!)

Aug 11: nothing booked yet

Any help would be appreciated! I know you guys are the experts!!
 
the AKL, Jiko and Boma are both really good vegetarian restaurants.

One thing to consider, and we have been the last two summers, is to take a break in the afternoon. You'll feel rejuvenated and fresh for the evening. The park hours are usually so long that there is plenty of time for touring.

San Angel Inn has a seperate vegetarian menu! It has 2 or 3 choices which usually includes either a salad (meh) or a vegetarian combination which includes an enchilada and burrito with rice. I haven't had it but have seen pictures on it and been confirmed before on the dis.
