It's fairly common for diners to leave their tables during Wishes to go out onto the terrace to watch the show... so not getting a window seat isn't that big of a deal.
I think you've got a better chance of being seated after Wishes. We've found CG runs behind. Our avg wait to be seated has been 30 min. People also camp out as Wishes approaches. We've even had our servers encourage this. So, I wouldn't rule out the chance that you may be waiting.

There's plenty of room on the terrace, and the music/narration is piped out there as well. So even if you don't get seated, we think the best view is out there anyway.

I can get a 5:20 and I understand we can go back later for fireworks, but how much of a pain is it to eat at CG at 5:20, go over to the MK for an hour or two and then come back in time for Wishes?

That's kind of up to you, isn't it? Since you said Wishes isn't until 10 p.m. it shouldn't be much of a hassle.
