California Grill Menu Questions

I know that the California Grill changes its menu to reflect the freshest market ingredients. But, how often is the menu changed? Is is seasonal, weekly, monthly, daily?

Also, are there any items that are not on the menu but can be made if you just ask?

I've eaten here twice before. I had a great experience in 2005 but in 2008 the service was rushed - how do I alert our server that we want our meal to be at a relaxed pace? Can I just tell the host/hostess or our server directly?

There's no schedule to the menu changes. They just do it whenever they get new stuff in.

As for the menu, it changes a few things once in awhile, but certainly not daily or even weekly. Except perhaps the flatbreads, which we found to change very often.

As for service, do what we ALWAYS do--tell your server you are in no hurry and just order your appetizer (and drinks, of course) first. When that arrives, then place your entree order. Or even wait until you are done the appetizer to order the entree. Same scenario for dessert.
This has worked well in every restaurant we've tried at WDW (and around here too). We've found that most servers are quite happy NOT to rush around waiting on you and they can then devote their attention to all the other tables who do seem to be in a rush to eat. Once they realize you are serious diners and not just "campers" there is never a problem.

As for special requests--I imagine they woukld try to help you out IF they had what you were looking for.
