California grill brunch

I have my heart set on brunch during our next trip. How flexible would California Grill be on the entrée?

I would either need the cheese let out of the frittata or request that the soft poached eggs be more well done.

I don't think you'd have any trouble requesting how you want the entree cooked. We were there in January and the service and attention to detail was very good.

Although, dinner wasn't quite as good as I was hoping (maybe my expectations were too high) and it is expensive (but we knew that going in).

I have never had any issues with specific requests. DH is allergic to melon so we have to be very careful with breakfast/brunch fruit options - the chefs are very accommodating.
