Would like to go to dinner at Boma with DD. I understand we'd have to take a bus to Transportation center or DTD then bus to AKL. Would it be a lot quicker to take a cab? Should we take Uber?

Do NOT take the bus with a transfer at DTD- it can take forever to make the one-way trip. Transfer at an open theme park instead. There are no resort buses stopping at the TTC, so that is not an option.
The fastest and most convenient way would be to take a cab, if that's within your budget.

I would also second the recommendation to take a cab (although, I'm not sure about whether all taxis have car seats). It'll be much faster than having to deal with a transfer. The general rule of thumb is to allow 45 minutes per leg of the trip, so with a transfer, that would be upwards of 1.5 hours (this is just in case you just miss the bus and have to wait for the next one). The taxi can get you there in less than 20 minutes (it'll be about $25 plus tip). I don't have experience with Uber at WDW, but I know that there are almost always taxis waiting in the taxi stand at the Boardwalk. Just head out the main entrance and you'll see them to your left (otherwise, one of the valet folks can help you flag one down).

Remember that with a cab or Uber, you'll need a car seat for the three year old.

Taking a cab (or Uber) is pretty much always the easiest way to get from one resort to another. The exception being the ones you can walk/monorail/boat between.

You could always walk to the Studios if it's open and take a AKL bus. After dinner, check which bus is going to an open park. Then take that park bus to the park and transfer to the BW bus. Not fast, but at least cost no money. Easiest and fastest is a cab or uber.
