PP, since you won't have a car and can't go to the regular grocery store, if you wanted to bring along some items for your mom (cheese slices, etc) it would be really easy to do. Here's how
Again, since you won't be going to the store you may not be able to buy a styrofoam ice chest but you can certainly bring a soft sided collapsible one with you. Either fold it up in your suitcase, or something we do for food on the plane (we travel from Ca so we are traveling for 7-8 hours by plane-with stops, etc) is I pack our sandwiches and snacks into a larger collapsible cooler and use it as one of my carry-ons. It works great and then you would have it in your room to use as well. Many of the soft sided ones tend to leak so I would put my ice in a Ziploc and keep it in the bathtub in the room.
Then you can either pick up so groceries at the resorts, or even bring along some of your own. Individual cheese slices would hold up well until you got to the resort and then you could put them in the cooler. You could also bring along other non-perishable items as well in your luggage. Even small plastic containers of condiments. Just don't bring peanut butter as I hear they have a hard time scanning it.
If you use the cooler as a carry on just make sure to bring mom some soft snacks she would like on the trip as well.
Have a great time. I'm lucky. My DM is almost 72 and really has no problems to speak of. She keeps up with my DD12 and myself, with no problem.
BTW, Bete, when are you going to be at POP? I run a POP fridge swap (5 years and still going strong) and maybe I have an opening during your trip?
