Buffet ideas?

Im having a cookie exchange here tomorrow night and my list of people who are coming just grew by about 5 :eek:

So I KNOW for a fact that I have 12 coming and have about that many "Maybe's I'll try"

Help!

What do I make??


So far I have cocktail weiners in BBQ sauce and of course more cookies than I know what to do with, and a cheese fondue with french bread and apples.

Any other ideas for buffet ideas? I know others will be bringing a few things but this is at my house and I really want it to be nice and to make sure that I have enough to go around.

Ideas? quickly please?
 
Chicken drummies and mini springrolls are good . GFS has lots of party trays if you have one of them nearby or try Sams.

If you are near a BJ's or Sam's, Nancy's mini quiche and party spirals are very good and easy. The spirals are mini sandwiches and you only need to thaw them.
 
a crudite is always nice, and if you have too much you can always make a soup the next day or whatever. especially at a cookie exchange its nice to have something fairly healthy to eat.

another thought is making spinach balls. I have a great recipe that I can post if you are interested. The best is that you can make them ahead and freeze them, then just bake them off. If you find you have a lot of people you can bake a lot of them, or if not you can just bake some and save the rest in the freezer for another time. They are usually a huge hit and are a snap to make.
 

How about a fresh fruit and/or veggie platter?
You could add ranch dressing and/or carmel sauce for dipping. (All are readily available in my supermarket.)

You've got plenty of sweets.
 
Cream Cheese warmed and spread in a dish with shrimp cocktail sauce over it and mini shrimp on top. Serve with crackers.

Bruschetta - easy to make and delicious at that.

Taquitos - If you are near a BJ's they have large boxes of Taquitos, all flavors. These are tortillas filled and rolled into long rolls. Just bake for about 15 minutes. They are delicious. They also sell them in the grocery store but they are fairly expensive there.
