I made some yesterday for our own personal "Fat Weekend." (The weekend before Lent starts.)

Can I tell you how much I LOVE this stuff? I find it absolutely addicting. ::yes:: If there is any in the house, I could eat it INSTEAD of every meal.

There are a lot of foods that I really love to eat, but I don't think that there is a thing that even comes close to Buffalo Chicken Dip.

Does anyone else feel this way? But if you do, I don't have any to share. I just finished the last of it. Lent starts tomorrow for us.
 
I absolutely LOVE this dip!! Does your recipe include bleu cheese? I'm not a fan of bleu cheese and I'm looking for a recipe that doesn't include it.

I made some for a party yesterday (the receipe thanks to the DIS ;)) and it was hoovered up, so I don't even have any leftovers :charac2:! I made some a couple of weeks ago for a Superbowl party and I had a ton left since there were fewer people at that party. I especially liked it reheated in the microwave and then glopped on low-carb tortillas. Yum!

ETA: Marti ... I make mine with Ranch Dressing. I have two friends who do not like Blue Cheese.
 

I know the recipe by heart, and the one that I use does not use Blue Cheese Dressing. :) I am sure that there are many variations, but this is the one that I use.

4 whole large chicken breasts/ cooked/ shredded.
12 oz hot sauce.
2 8-oz cream cheese.
1 - 16 oz bottle of ranch dressing.
2 cups shredded cheddar cheese.

Mix hot sauce with shredded chicken.
Melt cream cheese in sauce pan with ranch dressing.
Add to chicken mixture.
Add the shredded cheese.

Put in oven proof pan. Bake at 350 degrees for about 30 minutes or until bubbly.
Serve with tortilla chips or celery sticks.

This makes a-LOT, and can easily be 1/2ed.

I'm going to have to give it a try this week, especially since there is no blue cheese.
 
This sounds so yummy! And since I will be starting back into my low carb lifestyle this week, I have a new recipe for something new!

Absolutely! It fits in so well with Atkins (I'm not so sure about SB though?) You can eat it with the celery sticks, but I like it so much that I would probably just eat it by the spoonful! :blush:

My recipe is almost the same. Expect I pour the cream cheese/dressing mixture on top of the chicken and then I sprinkle some chopped celery on top before I bake it for about 15 minutes until bubbly. Then, I put on the cheddar and continue baking until melted, but not browned usually another 10-15 minutes.

I eat it with celery sticks and the afore mentioned low-carb tortillas.

What's cool about this recipe is that it could also be made lower fat by substituting low-fat cream cheese, dressing and cheddar.

DH and I do much better with Atkins than SB! What can I say - I :love: my bacon and eggs! Thanks for the suggestion of celery. I couldn't think of what I was going to eat it with (even though celery is the logical choice :idea: )
 
Sounds perfect! I took chicken out of the freezer tonight to have for dinner tomorrow. I know what I'll be making! YUMMY!

Although this is technically considered a "munchie" or an appetizer, it definately could be used as a main course. And if you are concerned about the fat content you could follow Robin's suggestions about using the lower fat Cream Cheese, Ranch, and Cheese and used baked tortilla chips. Or MAYBE it would taste good over some rice? Got to experiment a bit.

But I'm warning you, once you try it, you will want to make it again and again and again and again......
 
Wow! This does sound good. I just put back a package of drumsticks back at the meat counter because I couldn't think of any new way I wanted to make them. (I always use legs or thighs instead of white meat breasts.) I'm definitely trying this recipe out! :flower: I think i'd just make extra sauce though & serve the celery sticks cold, on the side. :)

Thanks Robin - I never thought to use Ranch -- can't wait to try it now!

I might just have to make some now that you brought it up.
 
Has anyone made this with home-made Ranch dressing instead of bottled?
 
I made this for a super bowl party last year and it was a huge hit. It is very rich, but for a once in a while thing, it's good.
