Budget trip for a family of 7

OP, I think you are being very generous and loving with wanting to help this family. However, if they are truly struggling, a gift card to a local grocery or big box store, gas cards, etc would be a much more thoughtful and generous gift. A hand up instead of a hand out that could further damage the self esteem of struggling parents. An extravagant gift is wonderful but lasts a few days. $$ for shoes, groceries or a ride to work goes a lot farther. Help them with the basics now so they can treat their family when they are truly on their feet.

this is my view also. I have been through some rough spots in my life. When pressed, I would prefer to spend any extra money in little ways over a longer period of time and make my daily life a little bit easier.

But every family is different and so they might certainly feel otherwise.

Some of the things we have enjoyed don't cost extra, or are inexpensive. There are lots of hidden gems inside the parks- much more than rides.

Make sure to point out the fun fountains to jump in at Epcot. The ones that come out of the ground. Also the Kim Possible or whatever mystery game it is. The jumping water fountains, and the hidden Mickeys.

The train at MK is often overlooked and is fun, as are some of the "lesser-known" attractions lie the people mover one and running around Tom Sawyer Island is a nice break from crowds.

Pressed pennies can be made and collected for souvenirs. 51 cents.

We use paper cups to share popcorn. Larger Dixie type cups- also good for sharing drinks....

OP - I think it is a wonderful idea and so very thoughtful of you! While I understand the thought behind some of the PPs suggestions to give them money or gift cards for basic necessities instead of a vacation, I think that what you are offering them is much more than a monetary gift - you are offering them an opportunity to make wonderful memories that they might not otherwise be able to do on their own anytime soon. While I do not know much about the camping option, as a family of 7, we have done many budget trips having 2 rooms at Pop Century. It's a great resort for families. And even though they wouldn't have the kitchen to cook in, they could bring breakfast food to eat in the room. I agree with a PP that the dining plan would be a great value for them - especially since all of the kids are under 9. They could also cut down on food costs by sharing meals and drinks. Again, I think it is really wonderful for you to want to do this for them!
