budget Prosciutto recipes

Hi all I have never eaten or cooked with Prosciutto.
I recieved a free pound and its sitting in my refrig ... not sure what to do with it.... any suggestions
 
There is a great lasagna recipe on the cooking light website I have made. It tastes even better as leftovers. You can also freeze it and use it later.
 
A big hit around here is to take and cook asparagus (don't overcook, it needs to be somewhat firm still) run it under cold water after to stop the cooking process. Take your prosciutto (I am assuming it is sliced, like for sandwiches) and spread cream cheese on the prosciutto (use as much to your liking) then place an asparagus on that and wrap up. It is like a little appetizer but they seem to be a big hit.
 
I made it in a tomato based sauce once and it was delicious. I was pregnant at the time though and the smell of it cooking killed me so I never made it again, lol
 

I've also seen scallops and proscuitto appetizer.
 
Search a recipe for Pasta Carbonara

This is made from Egg peas and proc. it is simple and yummy.

Also you can add it to anything you would make with Bacon. My DH is italian born and raised in Italy. This is how he eats it.

It is yummy with Melon, Cheese, Mac and Cheese, Pizza, Lay it over your turkey or chicken before cooking.

Rachel Ray uses it alot in her cookbooks too!
 
Definitely try some with just a piece of crusty Italian bread and maybe get some provolone cheese. My DH also likes to have it as a sandwich with roasted peppers and fresh mozzarella and a little oil and balsamic vinegar. Very yummy. My aunt always used to take chicken cutlets and roll up a piece of proscuitto and some Italian cheese (mozzarella, provolone etc.) in them and bake it in the oven.

Also delicious with melon, as a previous poster said.

I've used it on pizza - use a boli, mix diced tomatoes with spices of choice, add some exotic cheese and the prosciutto, bake and enjoy. The traditional melon and prosciutto is good. I think the Food Network web site used to let you search for recipes by ingredient.
 
there is a yummy cordon bleu recipe


pound chicken breast flat
layer a thin slice of prosciutto and havarti with dill

roll up and tooth pick closed

roll in egg & then breadcrumbs

bake in the oven til no longer pink

enjoy

These were going to be my 2 suggestions! I love it on sandwiches.
 
For a meal, use a piece of tinfoil, take tilapia filets and place a slice of proscuitto on top. Add black olives and feta cheese. Top with a squeeze of lemon juice. Roll them up and fold the tinfoil around them. Bake in the oven 350 degrees for about 25 minutes (until the fish filets are done). They are delicious!
 
chop it up with Olive oil, garlic and butter. Add tomato sauce, cook for 20 min. Then add heavy cream -- you got yourself some EZ Peazy pasta vodka sauce.

-or put on top of fried chicken cutlets with mozzarella.

- or I will third the - use it with crusty italian bread. - my fave.
I also stuff it into cherry tomatos with a little square of provolone.

Well it's not budget, but you can't believe how good it is if you take a slice of french bread, smear some goat cheese on it, and fold a bit of prosciutto on top. Oh drooooooooool.

That being said and more on the budget side, when we had some leftover prosciutto once, for breakfast I smeared some cream cheese on a toasted bagel, and the prosciutto was marvelous on top. Similar to that salty/creamy combo you get with lox.
