Budget Friendly Easter Gathering

Hello All,

I will be hosting a Easter gathering for our extended family and would like to get some budget friendly ideas from the experts

We will do a potluck for the food, I will be providing drinks (sodas, water, wine, etc) along with appetizers, paper supplies, egg hunt, etc.

We will be a total of 16 with 5 kiddos. I want to do extras and would like ideas.

A cute easter appetizer is to make baskets out of wontons - they are about 50 for $1 at the chinese store or $3 at the grocery store. You just spray mini muffin cups, and press into the cups. Spray again and bake at 350 until golden. You can fill them with pudding or mousse for a dessert, or a salad for an appetizer. My favorite is a spicy thai shrimp salad, but you can use any. They are always popular and I make them all the time, not just easter.

My kids got a cute party favor at an easter party - it was a little decorated clay pot with a dirt pellet and seeds to plant.

One appetizer I like to serve that feeds a lot, is inexpensive and tastes great are baked wonton cups stuffed with a sausage and cheese fillng. you bake the wrappers for a few minutes in cupcake pans. (can be done a day or two ahead) Just let cool and store in ziplocs.

It is basically one pound crumbled italian sausage browned. To that you add small can chopped black olives if you like, along with one cup ranch dressing and one cup shredded cheddar. Mix all together and fill each wonton. Reheat for a few minutes to warm them up.

I also stuff baked wontons with sauteed spinach, heavy cream, fresh parmesan. Or....with spinach and artichoke dip for a different spin.

They look really impressive and make a ton.
