Brunch recipes??

Does anyone have a good recipe for a hash brown/egg casserole?
I also need a recipe for a cucumber tea sandwich or any other good brunch recipes. I am having a small brunch on thursday and I cant find anything interesting but easy to serve! Any ideas welcome. I am going to make fruit kabobs and dip but other than that I am down to the wire with nothing!
 
Sorry, No help here. I'm the world's worst cook. I am so ashamed to admit that I had to ask DISers how to make quesadillas the other night... :blush:

I make cucumber sandwhiches a lot actually...for every party I throw. They are SUPER easy to make.

ingredients-
1 packet of ranch dressing (powder)
Mayo or Miracle whip (whichever you like better)
1-2 Cucumbers (depending on how many sandwhiches you're making)
"tea" bread- (That is what they call it at my grocery store but it may be called something else where you are. It's just a small precut loaf of bread- usually white bread- and it is small squares- and found in the bakery section of the store)

You take the packet of ranch dressing powder and
Add mayo or miracle whip- until you make a paste. About 1/2 a cup or just to taste (most say to add sour cream but the mayo/miracle whip makes it tangier)
Wash and cut the cucumber into fairly thin slices (circles)
Take 2 pieces of the bread, spread some of the ranch dressing on one side of each bread, place 1-2 slices of cucumber on the bread (depending on the size of your slice). Cover with the other slice.

That's it. If you can't get the ranch powder, you can substitute it for ranch dip that you get in the chip aisle. Just make sure it's on the thicker side.
 
This is not one of the hashbrown ones, but it's my favorite.

Breakfast Casserole
This is a really basic breakfast casserole. The amounts of eggs, bread and cheese can be increased, based on what you have available. It’s really good. It came from a fellow Longaberger friend. Enjoy!!!

6 eggs beaten
6 slices of bread - cubed
2 cups milk
1 cup of grated cheese
1 tsp. salt ( I use less, I use about 1/4 tsp.)
1 tsp. mustard
1 pound bulk sausage (browned)

Put into a 9x13 pan. I use PAM and spray the dish.
Bake 350 degrees for 45 minutes

This can all be mixed up the night before and just popped into the oven in the morning. It is really good!

Variations: Any kind of grated or shredded cheese can be used. I use the Kraft Shredded Mexican Four Cheese. Other seasonings can also be added, as desired. I usually add nutmeg and Essence by Emeril.
 

How about a quiche? Very easy and can even be made in prebought pie shells, the frozen kind.

I use hard salami, swiss and cheddar cheese. Layer them in the bottom and then pour a mix of 1.5 cups milk and 4 beaten eggs mixed together well. I usually put about 1/2 tsp of dill weed and some seasoned salt in the milk mix. I bake on 400 degrees for 30-45 min. until golden brown on top. Let sit about 5-10 min. before you cut. Everyone I make it for likes it.

You can add veggies and stuff but saute them forst so they aren't too watery.
