I make sure that we purchase Disney beach towels on our way out of the park on the first day. I really prefer large towels for the pool. They're a bit cheaper at home, but this way I don't need to pack them and we have a nice souvenir that is actually useful once we get home. Since I bring a lot of stuff we wind up leaving - travel bottles of shampoo and such - the towels fit in the suitcase on the way home. I let DD pick hers out - since she uses it every time we go to the pool, she doesn't forget she has it and it keeps her from asking for *everything* we see in the parks.
We took along our beach towels on our trip last October. We didn't do any waterparks, so I can't help you there, but we did not even unpack them for the WL pool (and we swam several days). The pool towels aren't huge, really about the size of a bath towel, but you could use more than one if you needed it. We found them to be quite sufficient. I would say save the room in your suitcase to bring home more stuff from the parks!
And although I hate to say this, we've had beach towels swiped more than once, although never at DVC to date. Both times while staying at the Contemporary - an Epcot beach towel and a Minnie beach towel. Both were on "our' chairs with our stuff - toys, shoes, etc. on top. So don't bring expensive ones or ones you really care about.......

The towels at the resort pools are large enough for us and we always pay the towel rental $$ when we go to a water park. It's just one less thing that I have to worry about packing and keeping track of.
We do have Disney beach towels, but use those at home or at the beach.
We don't pack them for the pools, although this year we may pack older ones for the waterparks. I've read that they can "take legs", and I really don't want to spend a lot on a towel just to have it taken. (I'm too cheap to rent one )
We have always taken them, but mostly for the water parks. We have never had them stolen though. That really is crappy. We usually use the pool towels at the resort, and since we are not going to the water parks this trip, we are not taking any.
They do take a bunch of room, plus if you wash them they take FOREVER to dry.
Towels are provided at the Moderate and Deluxe resorts at the theme pools. For the quiet pools and the pools at the value resorts you are to use your room towels. The 1st day we are there, I leave a tip and a note for housekeeping to please leave extra towels in the room. They always have. The towels are adequate. They are just white hotel towels, so not as aesthetically pleasing as a beach towel. At the water parks the towels have to be rented or bought.
I like to bring a nice Disney soft fluffy towel, we each pack one- but put it in a packmate bag and squeeze the air out so it hardly takes any space. I bought a cute Tinker Bell towel at the Disney Store for $8 on sale that I'm going to take in May.
For our family of five I can't imagine packing beach towels for us all (wasted space!). We were fine using the basic white hotel room towels for the pools and for TL. And we politely always return them. I too can't believe someone would steal a beach towel-isn't that so low?!
We always bring our own..but grab a pool towel as well.. I like to roll it up and use it for a pillow or just cover the parts of the lounge my large beach towel doesn't cover.
