Breakfast at Hotel New York

We are staying at Hotel NY for 9 nights in August. Will we get a breakfast 'time'? Also, if we do, can we have different ones on different days? We will want at least one lie-in!

Will there be some days for Paris? Or will you stay the whole time at the resort?

2 days in Paris and 1 day at Versailles. We had thought of staying off site and moving to DLP for 5 or 6 nights, but then thought that as Disneyland Park does not close until 11pm we could round off the day with fireworks! It's also so handy to the RER for Paris. To be honest, I don't know how much it is costing - haven't paid yet!
