We are borrowing DVC from our friends for this January. Once we have the reservation, can we take care of our own tickets, dining plan and reservations for dining??
 
If you want one of the dining plans, the member will have to add that to the reservation for you. It must be done at least 2 days prior to your arrival date and has to be paid for in full when added to the reservation.

You can make you own dining reservations by calling the main dining line at 407-WDW-DINE or on-line at disneyworld.com/dining. You can purchase your theme park tickets from any authorized ticket seller.
 
I will add that if you are going to be using Magic Express transportation from the airport to the resort, the member will also have to add that service for you through MS.

Think of it this way: Anything tied to the reservation must be handled by the person you are renting the points from.

Dining is not tied to the reservation, nor are tickets. So these are independent purchases. However, the DDP is tied to your room reservation as is ME.

It's a very easy phone call for the member to add anything to a reservation. Once he/she has provided all the names of the travelers, it's just a 2 minute phone call to add. But as somebody already said, the DDP has to be pre-paid. If the person you are getting points from is a friend, you should not feel badly having them call to add something.
If you have never stayed in a villa, you might want to try to go without the dining plan and eat some meals in the room. You'll have a full kitchen, might as well take advantage of it. You can still eat out, but if you are not spending money for breakfasts, snacks and a few dinners, it makes the costs worth considering.
We do food deliveries and eat every breakfast (except maybe once) in the room, and also bring our own snacks to the park. We eat a few dinners, and maybe 1-2 lunches if we are close to the room. Even just the orange juice, water bottles and snack savings really add up. We use garden grocer and find their service to be excellent.
Just something to consider. I see from your other posts that you seem worried about elements of your reservation that may be out of your control. I wouldn't worry about it, people use points all the time that they rent or borrow and have fantastic vacations.
