Booking meals after park closing?

How can you book a ADR at 60 days if you don't know what time the park wull close? DH and I are looking for a late evening meal at Blue bayou , but currently there are no park hours up-it says we can book a meal up to 10pm, but if the park closes at 8, what are we supposed to do for 2 hours? I know the shops remain open, but the rides don't and even i can't shop for 2 hours!
