Packages for the following year are usually released in early August, sometimes a little earlier. I would probably start checking mid July on a regular basis.
You could book a room only if you wanted to now, then switch it over to a package when those come out.

Yes, as long as you have a ressie, you can book dining for your whole trip (up to 10 days) at 180 days, even if you switch to a package later. If you book room only now (you have to call), you will be quoted the highest rate for 2012, with a required deposit of 1 night's room rate + tax with the balance due at check in. Your ressie will then be adjusted once the 2013 rates are released. As the pp said, the following year's rates are usually released in August, but the 2012 rates came out in early June of last year. Also, keep in mind that if you book room only now and want to change to a package later, the room only will have to be cancelled/refunded and a package booked, requiring a new $200 deposit as money paid toward one cannot be transferred to the other.

I know, this is new for me too. We always have gone in the fall until now and we are looking at early to mid February of next year. I think I am actually going to wait and book as soon as the packages are posted in July-ish, as long as it will be in time to do ADR's at 180
