The packages that include character dining only give you the vouchers for the meal--it's up to you to actually make the reservations for the meal of your choice.
You want to call Disney Dining about 60 days from your arrival to make your Priority Seating reservations for the resaurants of your choice. You can then purchase your vouchers online ahead of time if you want, or you can pay when you get to the meal.

I called and made reservations at Goofy's Kitchen, I did not tell them I had purchased vouchers for a character meal..... did they need that piece of information???

We like to have those bugetary things out of the way. But to save a little, we do this by buying diney dollars and gift cards ahead of time. We can save an extra 10% at Goofy's. Trattoria, Ariel's and Minnie's. All of which we do. The 10% really adds up. And by having a gift card, we can add a little here and there between trips. That's our way of "prepaying"

You can save 10% by being AP holders. That's how we get our discounts there. It isn't by using Disney Dollars or gift cards. You may also qualify by showing your Disney Visa or maybe even your AAA card, I'm not sure though, we just show our AP's for our discount.
