we are planning an extended family trip for February of 2020. (I know this seems far away but it takes us that long to get everyone in the family onboard.) we have family members with points at SSR but I will have a toddler so I’d like to stay at an Epcot area resort or a monorail resort for our family of 3. Do you all think I’ll be able to get a studio for 8 nights the first week of February of 2020 using the SSR points or should I plan on a cash reservation or going through David’s to get someone’s home resort?

I think so. We went this past February, on a cash stay at the WL and it was dead, crowd wise. So you might have a good chance at it.

A 1 bedroom at (BWV Garden View) for a Feb. (beginning Feb.) it shouldn't be a problem at 7 months. A Studio for 8 days will probably give you a problem especially if it expands into 2 weekends. As you said, maybe buy someone's BWV points, hopefully before the 11 month's window. Then you can get a Standard view studio (which is almost 33% cheaper than BWK View or Garden view) . I would then rent your points out to recoup most of your costs.

Based on reservation patterns for the last four years, Feb 1 to the Thursday before Presidents' Day is the lowest DVC demand time of the year at WDW and it is likely that, at 7 months out, you will be able find a room (or multiple rooms) if seeking Poly, BLT lake and theme park view, VGF other than studios, BCV, BWV pool/garden view and also 1BRs in BWV standard or boardwalk view. However, since they can disappear before 7 months out for any time of the year, you will still need some luck to get BLT standard view rooms, BWV standard or boardwalk view studios or 2BRs, and VGF studios, although that is a time of year when your chances of getting those are somewhat better than many other times of the year.
