This will be our first time booking at the 11 month window. We want to book an 8 night, 9 day stay. The first 3 nights, we need a studio. The next 5 nights we want a 2 bedroom and are having our family join us. The question is, can we book this whole trip at the day of check in, even though we plan to switch room type? Would I have to wait until MS opens to do this?

You will have to book in 2 parts. Each part, 11 months from check in! You can book on line.

At the 11 month mark, you are allowed to book one villa type for 7 nights. If you have any variation in villa types, each would get a "new" 11 month booking date. If you want to stay more than 7 nights at the 11 month mark, you would have to call back to book the additional days.

As noted each portion of the trip when you have two different sized rooms is a separate reservation with each having its own reservation number and its own 11 month window date. That will also carry over into the rest of your reservations: dining reservations will have two different 180 day out dates and FP+ two different 60 day out dates.

Actually a slight variance from this: the MDE system is smart enough to know if you have a split stay. It will allow 180+10 for dining and 60+10 for FP+ to be booked on the first available date, even when you have a split stay.

If a split stay where there are more people in the room on the second leg of the split, those extra guests' window would indeed be at the first day of the second portion of the reservation. For those staying in both accommodations, you can book for full length of stay on the first check-in's eligibility date respectively.

If you are saying that she can book a studio for 3 days and a 2 bedroom for 4 days at the on the first day she can book that is incorrect she could book the studio for 7 days but she can't book a studio for 3 days and a 2 bedoom fo 4 days it doesn't work like that with DVC reservations

It sounds to be that they were only referring to ADRs and FP+ and how MDE treats the 180 day and 60 marks respectively.
