Can anyone recall, when you book Southwest and Jetblue, do they require Passpoprt info for each Passenger?

No. Not when booking. I can't remember if I needed it when I did online check in for Southwest the day before though.
 
Your ID is only required at the airport. It is not needed for buying tickets or online check-in.
 

You don't need a passport for a domestic flight within the US. You need photo ID such as a driver's licence for anyone 18 years and older only.
