Booking a Cindy's Breakfast, but W/Out Park Hours?

I have a bit of a dilemma on my hands. I'd like to book Cindy's for breakfast one morning of our November trip. I believe it is still one of the few restaurants at the 180 day mark. Well, if this is so and park hours do not come out until later in the summer, how would I do this? Any ideas?
