So, if I decide to change my sail date on my August 9 cruise, can I move the money to future cruise credit or do I have to decide right then and there the date of my new cruise? I realize we will have to complete our sailing by a certain date in 2022.

I expect you need to select a specific date -- but you should be able to change that again in the future if necessary. This is the wording:

Guests who wish to change their sail date must move their sail date to one that commences prior to September 30, 2022.​

That doesn't mention ability to transfer to an FCC and book later. But maybe they will; you won't know until you call to ask.
