Boma Mulligatawny Help

I have the recipe for Boma's Mulligatawny from allears.net... it calls for 1 1/2 cups apples, frozen and cut in half. It calls for the apples to be added at the last minute. Has anyone made this, and how did you do the apples? Is it whole apples cut in half? Peel, seeds and all? Or did you peel and dice them and then freeze them?

Hello! I have not seen the recipe, and I did not even eat the Mulligatawny when I was at Boma...I think they have different soups on different nights. But everything I tried (and I tried almost every item on the buffet) was delicious so I am sure that soup is no exception.

My guess would be to peel, seed and dice the apple and then add it to the soup. I do not think you need to freeze the apples first...I think they just wrote that in the recioe cuz they have frozen apples on hand, since they make huge batches.

While I have not tried the Mulligatawny there (Curry & I don't get along too well) I used to work at a soup restaurant that had it often (my DW loved it). When we would make it all we would do was core the apples, leaving the peels intact. If memory serves me, we would use the more tart apples not the sweet. Enjoy :goodvibes

Note:
6 of one, half dozen of the other... I peeled and diced one apple and halved and cored one apple and threw both in. I liked having the apple chunks. It came out GREAT. It was a little thinner than Boma's version, but that can easily be fixed. Thanks again for all the help!
