We got this recipe on our last visit to WDW. I have made it twice and it turned out great. I use half of the amounts listed because it makes so much.
Boatwrights Corn Bread
yields 25 muffins
1 cup corn meal
2 cups all-purpose flour
1 and 1/2 cups sugar
1 tsp. salt
1 tsp. baking powder
2 cups canola oil
7 eggs
2 cups milk
2 cups frozen kernal corn
Combine all above ingredients in a large bowl and mix well.
Pour into greased muffins tins and bake at 375 for 30 minutes.
