The biggest difference is the decor. The room sizes and general layout are the same.

There is a desk in the bedroom of the 1 bedroom SSR and it has an outlet built into the backspash of the desk for your computer.

You'll find pretty much the same layouts and furnishings. They're just styled differently, either in an informal beachy theme or a slightly dressier horsey theme. They may have also straightened out the confusing bathroom doors in the 1-bedrooms.
