Best vegetarian meals for those who don't like salad?

Hi all!

We'll be traveling in February with a big family group, including my 14-year-old cousin who is vegetarian. The problem is, she doesn't like vegetables or tofu! So I'm trying to brainstorm some meal ideas for her that aren't a salad or meat dish with tofu or veggies subbed in. We'll be doing mostly counter service, and I know that there are toddler and kids meals with things like mac and cheese or spaghetti, but I think she'll need a bigger portion. Here's what I thought of so far, please help me add to the list! TIA!

Grilled cheese and tomato soup at Jolly Holiday
Marinara or cheese pizza at Red Rockets
Cheese ravioli at Boardwalk Pizza & Pasta

Anything else would be super helpful! If all else fails I guess she can live on Mickey pretzels and ice cream for a few days ;) We push her to try new things at home, but I think her mom just doesn't want to fight about food on vacation.
 
Bean burritos from either Mexican place at both parks.

Lots of different pasta options at Red Rockets or Paradise Pier (DCA) that you could just ask for without meat.

Cheese only monte cristo from Cafe Orleans.
 
I'm a vegetarian and we usually always eat Mexican food at either park. The portions are generous and filling.

Grilled cheese & tomato soup from Jolly Holiday are on my to try list! As is the tater veggie bake from Flo's.
 
Whitewater Snacks in the GCH has a nice variety of food that will please everyone in your group. Don't forget DTD. There are many eateries there, like Rainforest Cafe. Perhaps you can get a smoothie from Jamba Juice with a few healthy boosters added. You can see menus here, or on the Disneyland website.
All else fails, across the street is an IHOP and Dennys you can get breakfast anytime of day.
 

Or, just had a thought, you can order from Vons and have items delivered that she would eat. Oh, and at the Starbucks, there are yogurt parfaits which are very good. The same parfaits are in Whitewater Snacks too.

Boudin Bread - Has bread bowl soups for variety

Disneyland...
French Quarter restaurants offer soups and bread dishes.
 
My Favorite was the Vegetarian Chili at Pacific Wharf cafe was always my go - to but it seems to be gone (or only an occasional special). The Vegetarian Taco salad at Rancho Del Zocola was always yummy too.

Yes, we'll have quite a few snack items as well (I have DDs who are 7 and 2, so I like to keep snacks handy). So we'll have things like string cheese, granola bars, etc. Hopefully she'll eat that! It's tough being a vegetarian when you are a burgers/pizza/chicken nuggets kind of kid!
 
If she's serious about being vegetarian, do not get a soup without asking about the stock, and do not touch a cupcake without asking to see the ingredient list. Disney likes using gelatin in their cupcakes. And, of course, anything with marshmallow in it is out b/c of the gelatin.

(with all of that, I do NOT check cheese when I'm dining out)

There are veggie burgers around. If she might not want the black bean veggie burgers, she should check what kind that eatery uses before ordering.

The penne with marinara at Plaza is good, but expensive for what you get. The kid's meal of it, with less penne, some veggies, and a half a breadstick, is cheaper and IMO better.

Cheese ravioli at Boardwalk Pizza & Pasta

They actually have the ability to change things there. We get the Chicken Sun-Dried Tomato Pasta - Campanelle pasta tossed with sun-dried tomato pesto cream, withOUT the chicken. They make it more fresh for you, and it's really tasty. Huge portion, too.

There are many eateries there, like Rainforest Cafe.

I dislike the veggie burger there. What I always get there is the appetizer pita quesadilla made without the chicken.

Yeah, I'm worried about some of the soups for that very reason. It seems like many like baked potato or broccoli cheese use chicken stock (at least in most of the recipes I've seen). We'll see how dedicated she remains while on the trip. She's pretty good about it at home, and we totally support her, but there may just be too many delicious options while on vacation.

Does anyone have any good suggestions for Earl of Sandwich? I don't think she'd eat their veggie sandwich, wondering if they have hummus or anything? Or maybe a good vegetarian soup? I know we'll be eating there for sure. I guess if nothing else she can have some bread!

ou can often ask for a menu item to be prepared without meat if the listed version contains it.

I don't think she'll have much luck finding a vegetarian sandwich at Earl Of Sandwich. They only really have the one veggie one and a Caprese which has mozzarella, tomato, balsalmic and basil which kinda doesn't sound like a great sandwich to me unless that's already something you like. They have a few soups like broccoli cheddar, tomato and vegetable, but I'd ask about them as I can't find confirmation online whether they're vegetarian friendly or not.

I do believe they have hummus of some kind.
