Since we usually have the dining plan on our trips, usually we are not concerned with the value of our meals... more about the experience. Now with the prospect of no dining plan on our next trip, I find myself trying to figure out which table service restaurants have the best bang for your buck.
Any suggestions?

Best buffet value is Boma. It has an incredible selection of food options covering a wide range of tastes.
It's true on the dining plan, we quite often don't do buffets... and to be honest, they aren't my fav. But Boma is a good one. I will put this on my list.

I'd say... maybe Liberty Tree Tavern. My experiences there have always been hit or miss. However, it's not very expensive for being all you can eat (family style). We've had positive experiences at many buffets that had better food (Tusker House and Trail's End), but Trail's End isn't open, and Tusker House (opening soon) is more expensive.

I've never tried Liberty Tree Tavern. I will look it up. Thank you

It depends on how you eat. For my family, any buffet/family style is not a good value.

Some of the more reasonably priced restaurants we enjoy are:

Grand Floridian Cafe
The Wave
Homecomin
We generally don't eat at buffets, as we aren't particularly big eaters. Those look like great options. I think the Wave might be closed for renovations while we are there.

This. My family usually eats a normal sized plate, occasional dessert, and that's about it. Buffets are not a good value unless we have the oldest with us (he's a human vacuum cleaner). I also tend to eat mostly plant based while on vacation, which means my meals are on the lower end of the budget.

We found the Wave to be satisfying and a good deal for us, but you will want to look at menus and do a quick price check for meals at places that interest you. You can work out a budget that way and see if anything needs to be adjusted.

I'm a plant based eater as well, but my hubby likes a nice meal. He really doesn't like burgers and pizza etc, but I don't want to pay an arm and a leg for a nice dinner each night. I have been looking at menus and making lists. There are some great options.

Buffets are only a good value if your family will eat enough to make it worthwhile. If you're not huge eaters, kids meals (especially at QS locations) are generally a good bang for the buck since they are usually a decent portion and also include a drink.

My best friend always eats off of the kids menu, as she can't eat adult portions.

Yak & Yeti at AK & Skipper Canteen at MK

EDIT: I haven't eaten here, but Dis Dining show just covered Whispering Canyon and it was very well priced. It is nice that there is an option for "all you care to enjoy" skillets or just meals off the menu.

Two of our favorites during our last trip were The Wave and while not truly table service Geyser Point was wonderful.

Yak & Yeti and Spice Road Table
We really like spice road table for smaller plates - can get a drink, etc. Not stuffed aftwerward.

Just a note that The Wave is going under renovation soon: The Wave... of American Flavors at Disney’s Contemporary Resort will be unavailable this summer as we refurbish this space in time for the 50th anniversary of Walt Disney World Resort. Reservations will be available through July 15.

If you were happy with the dining plan, you could just put away the same amount of money, eat where you want, not worry about the value, and most likely still have money left over.
rarely did the dining plan save you money.
I would agree that we loved the Boma breakfast and hope it reopens soon.
Yak and Yeti also was very good and priced reasonably.
Doing a signature and splitting the app and entrée may be a good option for you.

Not sure about best value but prior to Covid here are our favorites:

Breakfast - Boma, Crystal Palace, Tusker House, Cape May, Whispering Canyon Cafe, and Trail’s End.
MK - Dinner Tony’s and BOG. LTT when they had the a la carte lunch.
Epcot - Coral Reef, Chefs, Tutto Italia, Le Cellier.
DHS - Hollywood Brown Derby and 50’s Prime Time Cafe.
AK - Rainforest Cafe
AKL - Boma dinner
