Best use of ticket?

We will be going to the world in November after a couple of our planned cruises have been cancelled. We will be traveling with a 7 yr old and a week shy of 3 year old. We are currently booked for 2 days at MK and HS with one at AK and one at Epcot. We have a rest day thrown in the middle, but considering how "cheap" the extra days tickets would be, I think it is almost foolish not to have an extra day park ticket and book a park for the extra day even if we choose the resort. Would we be better to add a AK day, or one of the other parks. Kids love animals, and honestly think they would ride the safari all day and be fine. I really want park hopper back so we can take care of a rain day or meltdown day, but know with the reservations, I need to plan a little more. Or do you find a cool dinner spot and book that park and show up late in the day? What are your thoughts?
 
One more vote for AK. Both of the walking trails are open. They are doing the bird show...which we enjoyed so much we went back a second time! If any of you like FOP, this is a most excellent time for you! You go through the main queue, and this is usually only a short wait, and when you get off the ride they ask if you want to ride again right away. If you do, they send you up the FP line and there is only a minimal wait for this. It was so awesome!!! We rode 4 times in one day (two in the morning, two in the afternoon)!!!
